- Varieties: We combine the structure of Macabeo, the aromatic charge of Parellada, the acidity of Xarel.lo, the power of Chardonnay and the color of Pinot Noir to enrich the organoleptic nuances of our quality sparkling wines.
- Winemaking and aging: We make an extreme selection of grapes. Gentle pressing to extract the juice from the pomace. The first fermentation takes place in stainless steel vats at a controlled temperature of 15º-18ºC for 10 days. We have an underground wine cellar that maintains the ideal temperature and conditions for the second fermentation in the bottle. The second fermentation takes place at a temperature below 13ºC, very slowly, for about three months and remains in contact with the lees for more than 120 months, in order to reach the optimal level of secondary aromas characteristic of long aging and to obtain a fine, integrated bubble.
- Clarification: After aging, the bottle is turned upside down and rotated 1/8th of a turn to bring the lees to the neck of the bottle.
- Disgorging: The next step is the extraction of the lees in "hot" (without freezing) in the purest traditional and artisanal way, so that the sparkling wine is completely clean and then the Expedition Liqueur with Food Gold is added and mixed in the same bottle. We use the best corks to close the bottle.
- Labeling: The labels are made of gold-plated metal. Each label is applied by hand and each bottle is accompanied by a certificate with its serial number.
- Tasting Note: Elegant, luminous rosé with fine bubbles that cling to the golden flakes and set them moving in the glass. Intense ripe fruit (red berries, pineapple, apple), pronounced pastry with a background of herbs and hints of quince. Balanced but intense, long and persistent, good release of well-integrated bubbles. The presence of gold enhances the silky texture and gives a metallic tone difficult to distinguish, whether the spirit or the palate ... The strong personality that gives it more than 10 years of aging on the lees makes it advisable to give it some time in the glass and even to decant it.
- Pairing: caviar, seafood, foie gras, strawberries, chocolate, are the most notorious, although it is an excellent accompaniment to any meal or occasion, enhancing important moments. Alluding to ancient cultures such as the Egyptians, who already used gold in food and drink for their festivals, one could say that it represents a source of health (eternal youth), success and love...
